Paleo Cereal

Ingredients

  • 1/2 c. coconut oil
  • 1/2 c. raw honey
  • 2 tsp vanilla extract
  • 1/2 c. raw pumpkin seeds
  • 1/2 c. raw sunflower seeds
  • 1 c. almond meal
  • 1 c. shredded, unsweetened coconut
  • 2 c. raw slivered or chopped almonds

Instructions

1. Pre-heat oven to 325 F

2.  Whisk first 3 ingredients in a small bowl.

3. Add all dry ingredients into a large bowl and mix the wet ingredients with the dry.  Combine well.  On a baking sheet with small sides spread a thin layer of the mixture.  Place in oven for about 10 minutes take out and mix around a bit and place back in oven for another 5-10 minutes.  You just want it toasted, once it looks nice and toasted take out and let cool for 5 minutes.  I keep it in an air tight container in the pantry.

Paleo Granola Recipe

Prep time: 10 mins               Cook time: 20 mins    
Inactive: 20 mins                   Servings: 6

Ingredients:
- 1 cup raw almonds
- 1 cup raw cashews
- 1/4 cup raw pepitas/pumpkin seeds
- 1/4 cup raw sunflower seeds (no shell)
- 1/2 cup unsweetened coconut flakes
- 1/4 cup coconut oil
- 1/2 cup raw honey
- 1 tsp. vanilla extract
- 1 tsp. sea salt
- 1 cup raisins (or your favorite dried fruit)

Equipment:
- Food processor or blender
- Medium sized mixing bowl
- Stirring spoon
- Parchment paper
- Baking sheet

Directions:
1. Preheat oven to 275 F. Place the almonds, cashews and coconut flakes in a food processor or blender and pulse a few times to break into smaller chunks. 
2. Microwave the coconut oil, raw honey and vanilla extract together in a medium sized mixing bowl for about 30-45 seconds. Add the seeds, nuts and coconut flakes and stir to coat.
3. Spread the granola mixture evenly onto a baking sheet lined with parchment paper and cook for about 20-25 minutes or until lightly browned, stirring once or twice. Remove from heat and add the raisins and sprinkle with sea salt, pressing the mixture together to form a flat surface (see photo below).
4. Allow to cool for about 20 minutes or until hardened, and then break into chunks and enjoy.

I went into a Vietnamese restaurant with a craving for pho but i decided to stay strong and stick to my diet with this salad.

Cucumber Strawberry Lemonade (Trial 1)
This infused lemonade was inspired by an alcoholic shot that a fellow bartender has crafted. The shot required cucumber vodka, but since I am sober, I made a non alcoholic alternative.
Ingredients for 1 serving:
5 Slices of cucumber
Strawberry slices to taste
Water
Freshly squeezed lemon juice (1/2 Lemon)
Lemon Slice (decorative)

Paleo Spaghetti Meat Sauce (Trial 1)

My Randition of Paleo Spaghetti! Zucchini noodles (fettuccine style) topped with Grass fed ground beef with chopped green and red peppers, and homemade organic tomato sauce.

This was my first time trying to make this, I held off on sharing the recipe since I haven’t perfected it quite yet.

I don’t have a lot of time in the morning to make breakfast, but since I’ve become more athletic, I need to add more starchy carbs to my diet. So  I kind of ripped off a recipe to make something quick since I didn’t have everything I needed for the original recipe, but it turned out great anyway!!
Sweet Potato Pancake
Ingredients:
1 Shredded/Grated Sweet Potato/Yam
2-3 eggs
tsp Coconut Flour
1/4 tsp Cinnamon
1/4 tsp Salt
Coconut Oil
Directions:
Whisk together all ingredients (except oil)
Cook on low-med heat with coconut oil. 
Pour batter into pan, the size is up to you. I was in a hurry so I just made one really big one. Don’t forget to flip it! (I used different measurements of ingredients, so your one big pancake might be huge)
It’s so easy… I suggest shredding the sweet potato the night before, if you don’t have much time in the morning or just making them the niht before. Also as you can see, I topped my big pancake with banana and bacon, drizzled with maple syrup. Only cause I love bacon maple things :)
